Talked with hubby and Brandon about meal plans. Since Brandon and Marti are making the traditional type meal on Christmas Eve, I will go untraditional for Christmas day and make enchiladas. One pan of chicken and one beef.

The last couple of years I’ve been making the Christmas eve dinner… And nobody has died, yet. My brother and his family come over on the eve and the wife's family comes over on Christmas day. One year the wife got very ill and I had to make Christmas eve dinner. Since then she has mandated I make the dinner. One of these years I’ll have to pull that sick trick..What is everyone else cooking/eating for Christmas holiday?
You'll drill your eye out, kid......and with you out of the way, I could have power tools!

That sounds fantastic; I will be making this. Thanks for the link. I have recently started making more meals using the crockpot...it's just so simple. I actually enjoy cooking. Like you said, you can come home from work and everything is ready. The last couple of years I’ve been making the Christmas eve dinner… And nobody has died, yet. I make Pepper Steak in a slow cooker. Wake up early and get it ready, go to work and when I come home make the rice, bacon wrapped shrimp, salad, and bread. Christmas day is just something easy to throw together, nothing special.
Here is the recipe I use. Comes out rather good. I cut the london broil into long strips, and the peppers and onions are cut long instead of chopped.

Merry Christmas to all of my friends from the Board:
To those who believe in the birth of our Lord,
To those who hope Santa Claus thinks they've been nice,
Their names on a list which he always checks twice.
The joys of the season and Festivus cheer
I wish you good fortune throughout the New Year.
No matter the holiday you celebrate,
Whatever your time zone, I hope that it's great.
That sounds so good!! I usually use grape jelly and mustard as a sauce for the cocktail sausages. I love Sweet Baby Ray's BBQ sauce though. I'm gonna try it your way next time!Instead of another baked ham, I'm making cocktail sausages in Sweet Baby Ray's BBQ sauce (adding grape jelly and diced onion) with Pilsbury croissants and deviled eggs. I may fry some homemade chicken fingers, too. Snack stuff. I'm also making from scratch a pumpkin spice sheet cake with cream cheese icing and almond cookies. My sister might bring spinach dip with Ritz crackers. We will get Chinese food the following day.

Yours sounds like good eats, too. I was telling Cat it was about time I had a nice ribeye. That sounds so good!! I usually use grape jelly and mustard as a sauce for the cocktail sausages. I love Sweet Baby Ray's BBQ sauce though. I'm gonna try it your way next time!
For Christmas Eve, I'll make ribeye steaks, loaded baked potatoes, a salad, and rolls. Dessert will be made from scratch red velvet cake with cream cheese icing.
Munchkin is vegetarian, so I'll do a spaghetti squash for her.
Christmas night is snacky foods, and leftover salad stuff.....and more red velvet cake.
I haven’t even started wrapping gifts. But I’m kinda done buying. Unless I can sneak in one more lol,
I am only now feeling Christmassy. I wasn’t sure whether I would be seeing my youngest or not. He is basically living with his SO. Well, they’ve decided to come here Xmas Eve and spend the night. We had already bought the presents, but now I th8nk we should give SO some jammies. It’s traditional with our kids....they open one present Xmas Eve and it’s jammies.
Obviously, I cannot make them a stocking...but I can fill a store bought one.
I should explain. There is not any issue or fighting with DS. We will see him, just wasn’t sure if it would be on Xmas day. I had decided to just accept that we wouldn’t.
Come on up to the mountain......well have plenty!Yours sounds like good eats, too. I was telling Cat it was about time I had a nice ribeye.
I think you'll like the BBQ version. I saw people did a tangy meatball version as well. Red velvet cupcakes are perfect for Christmas...yum.
