Found a good recipe on-line from Rachel Ray for Chicken Tetrazzini - uses egg noodles, cauliflower, a cheese sauce and left over chicken (I used already cooked thighs). Just cut them up into chunks.
The cheese sauce was easy to make and the egg noodles only take a few minutes to cook. Luckily I had already partially cooked cauliflower in the fridge.
You put it all in a greased casserole dish, sprinkle a bit of grated cheese and bread crumbs on top, then cook in the oven until bubbly. I added some turmeric, parsley and poultry seasoning - hope it turns out okay!
